I grew up eating this dish. It can be found on every Croatian plate at least once, if not a couple of times a month. While it is definitely something you acquire a taste for, it is also super healthy.

Ingredients for Kale Stew
1 bunch of kale, finely chopped
2 medium sized carrots, cut into rings
3-4 medium sized potatoes, cut into small pieces
1 medium onion, chopped
2 garlic cloves, chopped
1 tbsp olive or vegetable oil
3 tbsp all-purpose flour
2 tbsp paprika
2tbsp smoked paprika
1 tbsp salt
1 tbsp pepper
2 tsp vegetable seasoning (Vegeta)
How to Make Kale Stew
Put oil into a deep pot and heat it up. Add onions and garlic and cook until translucent.
Next, add all the spices except vegetable seasoning and let bloom for a few minutes until fragrant. Once the spices are fragrant, add flour and coat the onions until the flour starts to brown and stick to the bottom of the pot. Scrape the flour of the bottom as much as possible.
If necessary, add a bit more oil before putting kale into the pot. Cook the kale until it starts to wilt down. Then add the carrots and cook everything for a few minutes more.
Add enough water to cover the kale plus a cup. Then add the vegetable seasoning and stir, scraping the bottom of the pot.
Put the lid on and simmer on medium high for 15 minutes, stirring occasionally.
In the next step, add the potatoes, close the lid and simmer for 20 minutes or until the potatoes are cooked through.
