" I lived in Lebanon for a few years, and when I returned, I saw there was no pita bread available. So I set up a business here. My husband had to build a special oven to bake the bread commercially, and we started selling khoubiz sorj by special order until we left again to live in the U.S. Now pita bread is available in most of the supermarkets and bakeries, so everyone can get pita bread.

Ingredients for
Khoubiz Sorj - Pita Bread

  • 4 cups flour, sifted (white or whole wheat)
  • 3 teaspoons yeast
  • 1 tablespoon sugar
  • 1 1/2 tablespoons oil (optional)
  • 1 1/2 teaspoons salt
  • 1 - 1 1/2 cups warm water

How to Make
Khoubiz Sorj - Pita Bread

  1. Place oven rack at the bottom rung of the oven and preheat oven to 500°F. Place the baking trays in the oven to heat.
  2. Put the flour into a large mixing bowl. Make a small depression in the middle of the flour and add the yeast, sugar, salt, and oil in the depression. Pour in the warm water very gradually and knead until the dough is no longer sticky and is soft to the touch.
  3. Cover with a damp cloth and set aside to rest for 5 to 10 minutes.
  4. Divide the dough into 12-14 pieces and shape each into a ball.
  5. One at a time, place the balls on a clean, well floured, working surface. Using a rolling pin, alternate between rolling out and flipping each piece until flat and circular in shape, 5 to 6 inches in diameter and 1/8 inch thick. Ensure that the edges are rolled thinly. Cover and leave to rest on a bread cloth for 30 minutes.
  6. Without removing the trays from the oven, place the rounds, top side down, onto the trays and bake for three minutes. The bread should puff up.
  7. Remove the bread from the oven, place between bread cloths or kitchen towels, and gently push down the puff. Leave covered until cool.
  8. Store in a plastic bag in the refrigerator for up to one week or freeze for up to one month.
