When my kids grew up and moved out on their own, the phone calls started coming in: “Mom, how do you make this, and how do you make that?” ... It made me smile every time. I loved knowing the meals I had made during their childhood were still a comfort to them in adulthood.

This Peanut Butter Chicken Stir Fry was born during a phase when we were all trying to eat a bit healthier, and it quickly became a family favourite. It’s delicious, packed with flavour, and most importantly—simple and satisfying. Out of all the recipes I’ve ever made, this is hands-down the one they ask for the most.

Ingredients for
Mama Ure's Peanut Butter Chicken Stir Fry

  • 1 Tbsp oil
  • 1 lb chicken breast
  • 1 red bell pepper
  • Any vegetables - mushroom, onion, broccoli, water chestnut, etc.
  • Salt and pepper (to taste)
  • 2 Tbsp crunchy peanut butter
  • 1 1/2 cups chicken broth
  • 2 Tbsp soya sauce
  • 1 Tbsp sugar
  • 1 garlic clove, minced
  • 1/4 tsp cayenne
  • corn starch
  • peanuts (garnish)
  • green onion (garnish)

How to Make
Mama Ure's Peanut Butter Chicken Stir Fry

  1. Mix broth, garlic, sugar, Soya sauce, cayenne pepper, and peanut butter in a bowl.
  2. Cut up chicken into bite-size pieces. Chop veggies.
  3. In a large wok or frying pan, sauté chicken and veggies in oil. Add salt and/or pepper to taste.
  4. When chicken is done, add mixture and continue to cook. It will thicken. Add some cornstarch to thicken further.
  5. Garnish with peanuts and green onion.
