Arab cooking is about strong basic flavours, and garlic is a staple in many dishes. This is most apparent in our three sauces that are versatile and can be used on meats, fish, vegetables, and salads. Garlic sauce, or Zait B'toom, may even stand on its own as a dipping sauce for a variety of breads. Not surprisingly, it has also become quite popular locally and may be used on non-Arabic dishes; for example, it may be drizzled on barbecue chicken, and even french fries.

Ingredients for
Zait B'toom - Garlic Sauce

  • 1 cup oil
  • Cloves of 2 bulbs garlic
  • 3 tablespoons lime juice
  • 1 1/2 teaspoons salt

How to Make
Zait B'toom - Garlic Sauce

  1. Spoon 1 teaspoon of oil into a blender or food processor. Put in the garlic and puree. Add the salt.
  2. In an extremely slow stream, pour in a small amount of oil and blend until oil is incorporated.
  3. Slowly add small quantities of the oil and lime juice alternately, until all are used, blending continuously to form a thick emulsion. Continue blending until the mixture reaches a texture similar to mayonnaise.
  4. Store in the refrigerator in a covered glass jar.
