  • 3 eggs whites
  • 1/4 tsp. salt
  • 1 cup sugar
  • 3 tbsp. cornstarch
  • 4-8 oz. pkgs. of coconut

How to Make
Aunt Ethel's Coconut Macarons

  1. Beat 3 egg whites and 1/4 tsp. salt until stiff
  2. Slowly beat in 1 cup sugar
  3. Continue beating while adding 3 tbsp. cornstarch
  4. Cook in top of double boiler for 40 minutes stirring occasionally
  5. Cool
  6. Fold in 4-8oz. pkgs. of coconut
  7. Drop on cookie sheet
  8. Bake at 350° for 10-15 minutes
