Ingredients of
Aunt Ethel's Lemon Pie

  • 1 cup sugar
  • 5 1/2 tbsp. cornstarch
  • salt
  • 3 egg yolks (beaten)
  • 1/3 cup lemon juice

Meringue Topping:

Beat until fairly stiff:

  • 3 egg whites
  • 1/8 tsp. cream of tartar salt
  • salt

Add:

  • 6 tbsp. sugar

How to Make
Aunt Ethel's Lemon Pie

  1. Bring 2 cups of water to the boiling point in the top of a double boiler
  2. Add ingredients
  3. Stir until thick
  4. Add 1 tbsp. butter and lemon rind
  5. Cook pie shell and cool before putting in pie filling
