Simple classic made my way that always turns out amazing! One of the favourites in our home. Best served with extra cheese on top or alongside grilled cheese.

Ingredients of
Broccoli Cheese Soup

SOUP:

  • 5 medium broccoli crowns, chopped
  • 1 medium yellow onion, chopped
  • 2 cloves of garlic, chopped
  • 1 tbsp olive oil
  • 3 tsp chicken or vegetable stock (Vegeta) or 1 container of chicken broth
  • 2 tbsp thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp smoked paprika
  • 1 tsp nutmeg
  • 1 tsp chili pepper
  • 2 tbs sour cream

CHEESE SAUCE:

  • 1/2 cup butter
  • 2 tbsp all - purpose flour
  • 1 cup milk
  • 3 cups havarti cheese (or cheddar or mozzarella, or combination), shredded
  • 1 cup cheese for garnish (optional), shredded

How to Make
Broccoli Cheese Soup

  1.   Put olive oil in the pan and heat it up to high. Add onions and garlic and let it cook for 2 minutes until onions become translucent. Add broccoli and cook it for another 2 minutes and then add the spices to coat the broccoli. Let it cook for an additional minute.
  2.  If using stock, add water until the broccoli is completely covered and mix in the stock. If using chicken broth, add the broth and top off with water (if needed) to cover the broccoli.
  3. Cover the soup with a lid and let it simmer for 15 - 20 minutes. When veggies are cooked through, blend the soup.
  4. After 20 minutes, start making the cheese sauce on the side, in a different sauce pan. Put butter in the pan, heat it up and wait until it starts bubbling. Then, add flour onto it and whisk it. Wait until flour becomes a little bit yellow. Once it yellows, turn down the heat and add milk. Whisk vigorously to reduce clumping. Add cheese and whisk until it becomes a liquidy sauce. Add more milk, if needed, to adjust consistency. Remove from the heat.
  5. Whisk the sauce into the broccoli soup. Turn up the heat. Let it come to a boil and then reduce the heat again.
  6. Whisk in the sour cream and taste. Adjust seasoning.
  7. Garnish with cheese.
