2 large onions, thinly sliced
1 tablespoon butter
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup sour cream
1 cup mayonnaise
1/2 cup cream cheese, softened
1 teaspoon garlic powder
1/4 cup fresh chives, chopped (optional, for garnish)
1. Cook the Bacon
In a skillet, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and place it on a paper towel to drain. Leave about 1 tablespoon of the bacon grease in the skillet
2. Caramelize the Onions
Add butter to the skillet with the bacon grease and melt over medium heat. Add the sliced onions, sugar, salt, and black pepper.
Cook the onions for 20-25 minutes, stirring occasionally, until they are golden brown and caramelized. Let them cool slightly.
3. Mix the Dip Base
In a mixing bowl, combine sour cream, mayonnaise, cream cheese, and garlic powder. Mix until smooth and creamy.
4. Combine Ingredients
Fold in the caramelized onions and half of the cooked bacon. Mix well.
5. Chill the Dip
Cover and refrigerate the dip for at least 1 hour to allow the flavors to meld together.
6. Serve with crackers, toasted bread, or vegetables
Before serving, top with the remaining bacon and garnish with fresh chives if desired.
