Cheesy Egg Bagels

Hearty breakfast recipe that wouldn't be the same without the cheese sauce. It was made by my late mother-in-law and passed down to me by my brother-in-law. Loved by my husband's family for a long time, it became our own little ritual. Of course, with a little bit of my own touch. :)

Ingredients of
Cheesy Egg Bagels

BAGELS ASSEMBLY:

  • 3 bagels
  • 6 eggs
  • 4 slices of bacon, cut in half
  • Butter
  • 1 tsp salt
  • 1 tsp pepper
  • 3 green onions, chopped
  • 1 tsp black sesame seeds

CHEESE SAUCE:

  • 1 cup of cheddar cheese (or havarti), shredded
  • 1 tbsp butter
  • 2 tbsp all - purpose flour
  • 1 cup of milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili pepper

How to Make
Cheesy Egg Bagels

  1. Cook the bacon slices to preferred doneness. Put aside on a paper towel. Keep the pan hot.
  2. Crack the eggs into the pan. Season with salt and pepper. Add a splash of water and cover with a lid. Let cook for a few minutes and then turn off the heat.
  3. In the meantime, split the bagels into halves and toast the halves. Put toasted halves aside and butter them up.
  4. Start making the cheese sauce in a separate pan. Add butter and let it bubble. Then add flour and whisk until yellow. Reduce heat and add milk. Whisk until the clumps are gone. Add cheese and whisk until a thick but still slightly runny sauce appears. Add more milk if it turns out too thick. Add spices and whisk them in. Once ready, turn off the heat and put the sauce aside.
  5. Start the assembly. Take 2 bagel halves and put them on a plate. Add a few slices of bacon on the bottom, then 1 egg on each half, top off with the sauce. Garnish with green onions and sesame seeds.

Notes

Careful when making the sauce. It will thicken fast. If necessary, reduce heat for a better control.
