Ingredients of
Edda's Apple Cake

  • 10 medium sized apples (juicy and of good taste)
  • 1/4 cup sugar
  • 1/4 cup raisins

Dough

  • 4 1/2 cups flour
  • 3 tsp baking powder
  • 1 1/3 cup sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 1 1/4 cup butter (room temperature)
  • Milk (for top of dough)
  • Icing Sugar (garnish)

How to Make
Edda's Apple Cake

  1. Peel the apples and cut into small pieces.
  2. Put them in a medium sauce pan with sugar and raisins and stir over heat until apple slices are softer.

Dough

  1. Sift flour and baking powder together on a plastic board. In a cup stir in sugar, vanilla extract and eggs.
  2. Cut 1 1/4 cups of room temperature butter into it, then all this has to be kneaded together to form the dough (which has to be smooth).
  3. Roll out not quite half of the dough with a rolling pin and put it into a glass (10 x 15") baking dish and bake for 8 minutes at 350 degrees.
  4. Then you press some dough up the sides of your dish and use a fork on it. 
  5. Add the apples on the layer (no juice) and add the rolled out second layer on top.
  6. Using a baking brush, brush it with milk on top.
  7. Bake for 35 minutes at 350 degrees.
  8. Sprinkle with icing sugar.
