Wash and stab potatoes before letting them bake in the oven at 450 degrees for 45-55 minutes
Mash peeled and cooked potatoes and let them cool down (You want to let them fully cool to about 95 degrees so the heat doesn't cook the egg you're about to incorporate)
Whisk the egg to a full scramble and add it to the potato dough.
Mix together a dash of salt and pepper in the flour and flour your surface before laying down the potatoes.
Use a bench scraper to fold in the flour. Gradually add handfuls of flour rather than just dumping it all on your surface.
Once mixed, roll sections in to small logs and cut one inch pieces
sauce on a hot pan and serve with a sauce of choice (I personally enjoy it with pesto!)
