This is Jordan's favourite Lebanese dish that I make. One night we went to our favourite family restaurant, Tabouli's in Lakeshore. I was on a mission to copy this amazing meal. Ingredients of
Karen's Gyro Meat

  • 1 lb ground lamb
  • 1 lb ground beef
  • 2 tsp salt
  • 2 tsp oregano
  • 2 tsp flour
  • 1 tsp black pepper
  • 1 tsp Italian Seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne

How to Make
Karen's Gyro Meat

  1. Mix all spices together then mix into meat by hand (knead).
  2. Throw the meat down hard onto granite countertop about 40 times. (Pick up meat, throw down HARD ... good therapy!)
  3. Form into a rectangular shape and place on pan.  I make 2 loaves from 2 lbs of meat.
  4. Cover with aluminum foil.
  5. Bake 350 degrees for 1 1/4 hours, turning once.
  6. Do not overcook because after it cools, I slice thin and fry in olive oil for gyros.

Notes

The most important step is using the mixing technique of throwing the meat on the counter repeatedly. You can add sumac to the spice mix for extra flavour. 

 

If making Gyros, add meat, onion, tomatoes, feta, and tzatziki sauce. 

 

I also use this meat for skewers and add to Karen’s Lebanese Rice.
