This is a great casserole that is a classic traditional Taylor Christmas breakfast as well as other special holidays. It can be made the day before or earlier and freeze it. The first year that all the boys had left the nest, I got a call to make sure it was still on the menu for Christmas morning. I was not planning on this but made it late Christmas Eve as not to disappoint. Early into my son Jordan's career as a firefighter, he made this breakfast casserole to impress his crew. It was a big hit!

Ingredients of
Pelee Wings Breakfast Casserole

  •  1 lb frozen hash brown potatoes browned according to package directions
  • 1 1/2 dozen eggs scrambled and seasoned with salt, pepper and onion
  • 1 lb pork sausage, fried, drained and crumbled
  • 1 can cream of mushroom soup combined with 1 cup of sour cream
  • 1 can of mushroom stems and pieces
  • 1 lb of shredded cheddar cheese
  • 3/4 lb crispy fried bacon, cumbled 

How to Make
Pelee Wings Breakfast Casserole

  1.  After all ingredients are prepared, assemble in layers in the following order in a 3 x 13 pan:  Hash Browns, Eggs, Sausage, Creamy Soup, Mushrooms, Cheese then Bacon
  2. Cover with foil and refrigerate for 1 hour or up to 2 days or freeze. (If cooking after freezing just adjust the cooking time).
  3. Bake at 350 degrees for 60 minutes or until cheese melts and the dish is warmed through.

Notes

Feeds 8 to 10 hungry people and is a great brunch treat.
