When Shannel worked in Leamington, she would visit her grandmother on her lunch hour. One day she called her and asked if she could make Piri Piri chicken and have it ready for lunch…. Well, mom called me in a panic because the chicken wouldn’t be thawed out before her lunch. SO, she went to the Superstore, bought a whole chicken (that was already cooked), took that chicken and rubbed it with Piri Piri sauce, placed it in the oven for a few minutes and voila … Portugese Piri Piri Chicken! Shannel never knew the difference. Vavo always aimed to please, no matter what.

Ingredients of
Piri Piri Chicken

  • 3 teaspoons sweet smoked paprika
  • 3 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon granulated sugar
  • 2 teaspoons ground cumin
  • 1 teaspoon dried thyme
  • 6 fresh basil leaves
  • 8 garlic cloves
  •  Pinch chili peppers
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 lemon, juiced
  • 4 skin-on chicken leg quarters (thighs and drumsticks attached)
  • 1 tablespoon chopped cilantro, for garnish

How to Make
Piri Piri Chicken

  1.  Combine all ingredients and rub on the chicken. 
  2.  Preheat oven to 400 degrees F for approximately 50 minutes.
