Roasted Red Pepper Soup

A friend made a batch of this soup for me before a weekend getaway. This soup is now known as “the engagement soup” because this was the meal we ate right before my partner got down on one knee and purposed! Now, no other roasted red pepper soup compares to THE engagement soup.

Ingredients of
Roasted Red Pepper Soup

  •  4 Tbsp. Butter
  •  1 onion
  • 1 Tbsp. Flour
  • 6oz can tomato paste
  • 12oz jar roasted red peppers (rinsed, drained and chopped)
  • 28oz can plum tomatoes 
  • 1 cup vegetable broth
  • 1 cup heavy cream (can substitute with non dairy alternative)
  • 1 tsp. Dried basil
  • 1/2 tsp. Salt
  • 1/2 tsp. Black pepper
  • 1/2 cup Roasted Garlic & Peppers (spice blend, brand: club house)

How to Make
Roasted Red Pepper Soup

  1. Melt butter on medium/high heat. 
  2.  Add onion (soften).
  3. Add flour and stir.
  4. Add red peppers, plum tomatoes, tomato paste and all seasoning.
  5. Break up tomatoes with spatula. Cook for 5 minutes. 
  6. Add vegetable broth and cream. Simmer for 20 minutes. 
  7. Purée. 
  8. Enjoy!
