Savory Arab pies make a mouth-watering starter, and when accompanied by a salad, make for a perfect light lunch. The pie fillings represent the diversity of Arabic cooking and include meat and pine nut medleys as well as vegetables and cheese.

Ingredients for
Ajeen - Pie Dough

  • 4 cups flour, sifted
  • 1 teaspoon sugar
  • 1 teaspoon yeast
  • 3/4 teaspoon baking powder
  • 1 teaspoon salt 
  • 2 ounces shortening (plus extra for greasing)
  • 2 ounces butter
  • 1 - 1 1/2 Cups lukewarm water (approximately)
  • Oil for greasing

How to Make
Ajeen - Pie Dough

  1. Combine the dry ingredients in a large mixing bowl.
  2. Melt the butter and shortening and pour into the dry ingredients.
  3. Begin to knead while gradually adding the water (if the dough becomes sticky, stop adding water). Continue kneading until the dough comes together in a smooth ball.
  4. Grease the palms of your hands with oil and rub the dough ball lightly to coat with the oil. Cover with a towel and allow to rest for 30 minutes. 
  5. Divide the dough into 25 to 30 equal pieces. Shape each piece into a ping-pong sized ball and lay out on a lightly floured surface.
  6. Beginning with the first ball you formed, flatten each into a 4 to 5 inch circle using your fingers or a rolling pin.
Now you are ready to make your beef pies (Laham B'ajeen) LINK, Patchoi Pies (Fytoyir B'silik) LINK, or Cottage Cheese Pies (Fytoyir B'areesh) LINK with the filling you have prepared.


Notes

TIP - To make dough balls with a smooth surface, hold a piece of cut dough in the palm of one hand. Using the other, pull on all sides of the ball and pinch and tuck them together at the bottom. On a well floured surface, tucked side down.
