Ingredients for
Khoubiz Simsum - Sesame Bread

  • 4 cups flour, sifted
  • 4 teaspoons granulated sugar
  • 1 teaspoon yeast
  • 1 teaspoon salt
  • 2 tablespoons margarine
  • 2 tablespoons shortening (plus extra for greasing)
  • 1 - 1 1/4 cups lukewarm water
  • 2 cups toasted sesame seeds
  • oil for greasing

How to Make
Khoubiz Simsum - Sesame Bread

  1. Combine the flour, sugar, yeast, and salt in a large mixing bowl.
  2. Melt the margarine and shortening in a small saucepan or in the microwave oven and mix by hand into the dry ingredients.
  3. Pouring a small amount of water at a time into the mixing bowl, work the liquid into the flour mixture with your hands. Knead well to a soft dough texture, and shape into a ball.
  4. sprinkle the dough ball with 2 tablespoons of flour and knead again until smooth.
  5. Rub the inside of a clean bowl with oil and transfer the dough to the bowl. Cover with a towel and set aside until dough doubles in size, approximately 45 minutes.
  6. Pour the sesame seeds into a fine mesh strainer and rinse with water.
  7. Preheat the oven to 350°F.
  8. Grease 5 large cookie baking sheets with shortening.
  9. Divide the dough into 5 equal pieces, shape them into balls, and place each ball on one of the greased baking sheets. Set aside for 15 minutes.
  10. Flatten each ball and roll with a rolling pin as thinly as possible. You should almost be able to see through the dough to the baking sheet. (The thinner you roll out the dough, the crisper the bread will be).
  11. Sprinkle 6 tablespoons of sesame seeds evenly over each flattened piece of dough. Roll the rolling pin once over to embed the seeds into the dough.
  12. Using a fork, stick the dough at 3-inch intervals to allow the gases to escape easily. This prevents the bread from rising while baking.
  13. Immediately place in the oven and bake until the bread turns brown, approximately 20 to 25 minutes.
  14. Remove from the oven and place on a cooling rack. As the bread cools, it becomes crisper. When cooled, break into pieces.

Notes

VARIATION - To make delicious zaatar crisps, use the zaatar mixture instead of sesame seeds.
