I discovered this recipe on the 1982 Milk calendar, which I have collected since they started making them. This recipe is from February 1982, Oatmeal Pancakes. I used to make them for my son when he was young. They freeze well, when warmed up, are like they were just made. I have tweaked the recipe over the years, adding extra cinnamon and also add vanilla.

Ingredients for
Jan’s Pancake Recipe

  • 1 1/2 cups rolled oats
  • 2 cups milk
  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose unbleached flour
  • 1 tbsp. brown sugar
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 eggs, beaten
  • 1/4 cup butter, melted

How to Make
Jan’s Pancake Recipe

  1.  In a large mixing bowl, blend rolled oats and milk; let stand 5 minutes. 
  2. while oats are soaking, blend together flours, sugar, baking powder, salt and cinnamon.
  3. After oats have soaked for 5 minutes, add dry ingredients, beaten eggs and melted butter to oats until combined. 
  4. Pour 1/4 cup batter for each pancake onto a hot, lightly greased griddle. 
  5. Cook each pancake until edges become dry and surface is covered with bubbles.
  6. Turn and cook second side until golden brown.
