This is Jordan's favourite Lebanese dish that I make. One night we went to our favourite family restaurant, Tabouli's in Lakeshore. I was on a mission to copy this amazing meal. You can find all of the entire menu ... look up Karen's Gyro Meat, Lebanese Rice, Shish Tawook, Beef Kebab, Garlic Sauce and Hummus. This took lots of tries to get it perfected so I hope you all enjoy it as much as my family.

Ingredients for
Karen's Fattoush Salad

Dressing - Make a day ahead

  • 6 Tbsp olive oil
  • 4 Tbsp lemon juice
  • 4 garlic cloves, pressed or grated  
  • 2 tsp sumac
  • 2 tsp balsamic glaze or pomegranate molasses
  • 1 tsp mint, fresh or dried
  • 1 tsp kosher salt
  • 1/4 tsp ground allspice
  • fresh cracked black pepper to taste

Salad - Cut up small

  • 1 large head of romaine lettuce
  • 1 large tomato, diced
  • 2 - 3 Persian (seedless) cucumbers
  • 5 radishes
  • 2 green onions/scallions (whites and greens)
  • 1/2 cup fresh chopped parsley
  • Feta cheese (optional)

Pita Chips: 

  • 1 Large pita bread cut into pieces
  • 3 Tbsp olive oil
  • Salt & pepper to taste
  • Sprinkle with sumac spice

How to Make
Karen's Fattoush Salad

Dressing:

  • Mix the ingredients, bottle and refrigerate.  Make a day ahead.
  • Makes enough dressing for 2 large heads of romaine (1 head serves 4)

Salad:

  • Toss ingredient in a large bowl.

Pita Chips:

  • Fry bread in olive oil, add spices, until crispy.
