This is Jordan's favourite Lebanese dish that I make. One night we went to our favourite family restaurant, Tabouli's in Lakeshore. I was on a mission to copy this amazing meal. You can find all of the entire menu ... look up Karen's Fattoush Salad, Gyro Meat, Shish Tawook, Beef Kebab, Garlic Sauce and Hummus. This took lots of tries to get it perfected so I hope you all enjoy it as much as my family.

Ingredients for
Karen's Lebanese Rice

  • 2 cups Basmati rice, water
  • 1 cup vermicelli pasta, broken 
  • 2 1/2 Tbsp olive oil
  • Salt
  • 1/2 cup toasted pine nuts, optional

How to Make
Karen's Lebanese Rice

  1. Rinse the rice well (a few times).  Place in medium bowl and cover with water.  Soak 15-20 minutes then drain well.
  2. In a medium non-stick cooking pot, heat oil on medium. Add the vermicelli and continuously stir to toast it evenly. (If it burns, throw out and start over).
  3. Add rice and continue to stir so the rice is well coated with oil.  Season with salt and maybe a few other spices (not necessary if adding spicy meat at the end). 
  4. Add 3 1/2 cups of water and bring to boil until the water reduces.  Turn to low and cover. Cook 15 - 20 minutes on low.  Turn off heat and leave the rice undisturbed in pot for 10 - 15 minutes.
  5. Uncover and fluff with fork.  Add meat if desired or cooked lentils, etc.  Put on platter and top with toasted pine nuts if desired.
