This is one of Jordan's favourite Lebanese dishes that I make. One night we went to our favourite family restaurant, Tabouli's in Lakeshore. I was on a mission to copy this amazing meal. Ingredients for
Karen's Hummus

  • 1 can (15 oz) chickpeas
  • 1/2 tsp baking soda
  • 1/4 cup lemon juice (2 lemons)
  • 1 clove garlic, roughly chopped
  • 1/2 tsp fine sea salt, to taste
  • 1/2 cup tahini (store tahini in cupboard, not fridge)
  • 2 Tbsp ice water
  • 1/2 tsp ground cumin
  • 1 Tbsp olive oil 
  • Garnish – olive oil, sumac, parsley

How to Make
Karen's Hummus

  1. Place chickpeas in medium saucepan and cover with water.
  2. Add baking soda.
  3. Bring to boil for 20 minutes.
  4. Drain and run cool water over them for about 30 seconds.
  5. In a food processor, combine lemon juice, garlic, and salt.
  6. Let rest for 10 minutes.
  7. Add tahini.
  8. Drizzle in 2 Tbsp of ice water.
  9. Add the cumin and add the cooked chickpeas.
  10. While blending, drizzle in the olive oil.
  11. Blend until super smooth. Scrape down side of processor.
  12. Taste and adjust seasoning (salt, lemon juice).
  13. Garnish with olive oil, sumac and parsley.
