Karen's Make Ahead Mashed Potatoes

This recipe is a family favourite for Christmas and other special occasions when we all gather. I prepare it the day before and just re-heat ... sometimes I even decorate the top with a parsley stencil design. It is always rich and creamy and a real crowd pleaser.

Ingredients for
Karen's Make Ahead Mashed Potatoes

  • 12 Yukon Gold potatoes (about 5 lbs)
  • 1 Package cream cheese
  • 1 1/2 cups hot milk
  • 1/3 cup butter
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup finely diced sweet red pepper (or garlic, spices to taste)
  •  1/3 cup minced fresh parsley or chives

How to Make
Karen's Make Ahead Mashed Potatoes

  1. Peel and cube potatoes. 
  2. In large pot of boiling salted water, cover and cook potatoes for about 25 minutes or until tender. 
  3. Drain and return to low heat for about 30 seconds to dry.
  4. Press potatoes through ricer or mash well.  
  5. Mash in cheese, milk, butter, salt and pepper until smooth.
  6. Stir in red pepper and parsley. 
  7. Scoop into microwaveable serving dish, smoothing top.  Cover with plastic wrap; refrigerate for up to 2 days.
  8. Reheat in microwave on high for about 8 minutes.
