"On entering the home of her in-laws for the first time, an Arab bride is handed bread dough and lifted to place it over the doorway before she enters. This ritual symbolizes fertility and prosperity. Bread rises and multiplies, so too will the bride... hopefully."

"When a baby first enters an Arab home, bread is broken over the baby's head and everyone present in the home shares a piece of the broken bread. This is done to bless the baby with prosperity and welcome the baby into the home."

Ingredients for
Khoubiz B'zaitoon - Olive Bread

  • recipe Arabic Bread (khoubiz) Link to Arabic Bread
  • 3 cups black olives, well rinsed and drained, pitted and chopped coarsely

How to Make
Khoubiz B'zaitoon - Olive Bread

  1. Follow the Arabic Bread recipe with the following addition: add the prepared olives to the dry flour mixture and mix well before adding the liquid ingredients.
  2. Continue the recipe as described.

Notes

More olives may be added if desired, as this bread is often eaten on its own.

TIP - Putting the olives into the dry ingredients as per recipe may turn the overall dough mixture a darker colour. If you prefer a whiter looking dough, wait until you are ready to divide and form the dough into balls, and then stuff the olives into each piece while shaping it into a ball. This method enables you to leave some loaves plain if you desire.
