"No Arab meal is complete without bread. It is more than a side dish. It's a utensil used to scoop up hoummos, to slide kabobs off a stick, and even to mop up the sauce off your plate. Some varieties of bread, such as olive bread, need no accompaniment.

Ingredients for
Ma 'noosh B'zaatar - Herb Bread

ZAATAR MIXTURE

For 1 cup zaatar mix

  • Add: 3 teaspoons sumac and 3/4 cup oil

How to Make
Ma 'noosh B'zaatar - Herb Bread

  1. Follow the Arabic bread recipe from steps 1 through 9, but divide and shape the dough into 36 balls instead.
  2. Turn each ball smooth side up onto baking trays greased with shortening, leaving enough space between each to flatten the balls.
  3. Press down and flatten the balls with your fingertips to form 3-inch circles.
  4. Place a level teaspoon of the zaatar mixture onto each circle. Spread  evenly over the surface of the dough. Using the back of the spoon, press the mixture down gently to embed it onto the dough. If the circle loses shape, neaten, and then leave to rest for a further 30 minutes.
  5. Preheat the oven to 450°F.
  6. Bake for approximately 10 minutes or until bread turns very light brown on the bottom.

Notes

Leftover zaatar mixture makes a delicious dipping sauce for Arabic bread. Also spread it on pita bread and toast it in the oven. The mixture may be stored for up to one month in the refrigerator.
