I’ll be honest — I stumbled on this rhubarb cookie recipe somewhere online and didn’t think much of it at first. Just a curious scroll-through on a slow afternoon. But the moment I made them, I knew they were something special. Tart rhubarb wrapped in soft, sweet comfort? Yes, please.

What surprised me most was how forgiving the recipe turned out to be. I’ve made it with vegan butter for our dairy-free crew, swapped in gluten-free flour when needed — and every time, it still delivers. The kind of cookie that disappears from the plate faster than you expect, and makes everyone feel included.

Maybe I didn’t inherit this one from a grandparent, but I am passing it down. Because a good recipe is like a good story — even if you didn’t write the first line, you make it your own.

Ingredients for
Rhubarb Cookies

  •  1 cup brown sugar
  • ½ cup butter softened
  • 1 large egg
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup rhubarb finely diced

How to Make
Rhubarb Cookies

  1.  Preheat oven to 375ºF.
  2. In a large bowl, beat brown sugar, butter, and egg together.
  3. In another bowl add flour, cinnamon, salt, baking soda, and baking powder. Mix well.
  4. Add dry ingredients to wet ingredients and beat well until dough forms.
  5. Stir in rhubarb.
  6. Using a 1-inch cookie dough scoop, form balls of dough and place them on a greased cookie sheet. 
  7. Bake cookies for 12-14 minutes or until baked through. Allow to cool on cookie sheet for 5 minutes. Then place on a rack until cool completely.
  8. Serve and enjoy.
