With bacon, eggs, sweet potatoes, and whatever wholesome ingredients they feel like tossing in that day, it’s packed with the nutrients that fuel both body and soul.

It’s also a nod to the Garage Gym philosophy: food is fuel, family is strength, and a shared meal is a chance to reset, reconnect, and recharge. Simple, healthy, and full of heart—this is how the Smiths start their Sunday.

Ingredients for
Tony's Brunch Hash Bake

  • 2 sweet potatoes, peeled and diced small (Yukon Gold potatoes work great too)
  • 1 red onion, diced
  • 1 red bell pepper, chopped
  • 1 can chickpeas, drained, rinsed, and dried
  • 6 farm-fresh eggs (aim for 1–2 per person)
  • Spices: salt, pepper, smoked paprika, chili powder, cumin
  • 1–2 tbsp coconut oil

Toppings (add just before serving):

  • Sliced radishes
  • Lime wedges
  • Chopped cilantro
  • Green onions

Optional Sides:

  • Bacon, ham, chicken, or turkey


How to Make
Tony's Brunch Hash Bake

  1. Preheat oven to 425°F.
  2. Clean and chop all vegetables. In a large bowl, toss them with coconut oil and your seasonings until evenly coated.
  3. Spread everything out on a greased baking sheet in a single layer. Roast for 25–30 minutes or until veggies are tender and lightly crisped.
  4. Remove from the oven and use a spoon to create 6 wells in the veggies. Crack an egg into each well. 
  5. Return to oven for 7–8 minutes, or until egg whites are set.
  6. Remove from oven, top with radishes, cilantro, green onions, and a squeeze of lime. Season with salt and pepper to taste. 
  7. Serve immediately!
