With a few clever modifications—like layering chocolate chips so they don’t sink, and swapping in sour cream for added richness—he’s perfected a moist, flavourful treat that’s both easy and indulgent.

This isn’t Michael’s first time contributing to a cookbook, either. He’s shared his creations in other collections, always happy to offer something comforting and accessible. Whether for family, friends, or neighbours, this loaf is his go-to comfort bake—practical, delicious, and made with care.

Ingredients for
The Mayor's Banana Bread

  • 4 very ripe (black) bananas
  • 1 cup sugar
  • 1/4 lb. margarine/butter
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 cup raisins or chocolate chips or nuts
  • 1/4 tsp salt
  • 1/8 cup bran (if desired)
  • 1 cup sour milk or cream (add 1 tsp of vinegar to milk and it will sour immediately)

How to Make
The Mayor's Banana Bread

  1. Mix first 4 items and blend until smooth.
  2. Add remaining items and blend until smooth.
  3. Pour into loaf or cake pan (greased).
  4. Garnish top with fruit or chocolate chips.
  5. Bake at 375°F for one hour until bread tests – do not overbake.
